1. | Preheat oven to 200oC for 10 minutes |
2. | Marinade minced beef for 15 minutes, cut the eggplant in half and remove the middle meat, sprinkle with some cornstarch | 3. | Sautee onions and garlic, add in minced beef, diced carrots, corn kernels, eggplant meat and seasonings, mix well. Thicken sauce with some cornstarch water. |
4. | Put the ingredients on top of the eggplant and sprinkle with some parmesan cheese. Put into oven to bake for 15 minutes. Serve Hot |
