Pan Fried Eggplant |

Ingredients

1 pc eggplant | 6 pc of minced garlic |

Seasoning
|
|
1 1/2 tbsp light soy sauce | 1 tbsp dark soy sauce | 2 tsp sugar | 1/4 cup water | a dash of sesame oil | |

Marinade

Cooking Method

1. | Fry minced garlic in 1/2 cup of peanut oil over medium heat until golden brown. Drain and mix well with seasonings, bring to boil. Let it cool. | 2. | Finely slice eggplant, put over on dry pan in medium heat until light golden brown. Pour sauce over eggplant and serve. |
