Ingredients: | Some lettuce | 50 g shredded coconut, toasted | 50 g roasted almonds and roughly chopped | 40 g ginger roots, diced | 40 limes, diced with skin | 10 g chopped chilli | 100 g diced shallots |

Sauce: | 1/2cup honey | 190ml water | 1/4 cup almonds, roasted | 1/2 tsp salt | 1/4 cup shredded coconut, toasted |

Cooking Method

1. | To make the sauce, add all ingredients together in a heavy-based saucepan and bring to boil. Reduce the heat and simmer for about 10 minutes. Skim as necessary. Remove from the heat and allow to cool, Pulse blend to a smooth sauce. | 2. | Arrange all the ingredients on a plate. To eat, make a small cup from a leaf and place some ingredients on top. Top with the sauce. |
