冬菇西芹蒸滑雞

新鮮雞髀2隻(去骨)
乾冬菇3朵
西芹3段
薑3片(切絲)
蔥1條(切段)

紹酒、生抽各1湯匙
鹽1/4茶匙
糖半茶匙油
粟粉各1茶匙
Paraan ng pagluluto

乾冬菇去蒂,加水浸軟,切絲。西芹撕去老筋,洗淨切短。雞髀肉洗淨,切細塊,下醃料、薑絲、冬菇絲拌勻,置半小時。把西芹鋪在碟上,放上冬菇雞塊,隔水大火蒸8分鐘,下蔥段供吃。

蒸滑雞也可選用急凍雞髀肉,雞髀肉解凍後用淡鹽水浸片刻,以去除雪味,即可烹調。
