蓮藕章魚牛腱湯
Ingredients
牛腱12兩
章魚2兩
蓮藕約1斤
綠豆2兩
陳皮1片
清水12杯

Cooking Method

陳皮用水浸軟,刮淨瓤。蓮藕洗淨,在一端的藕蒂切厚片,釀入綠豆(約八成滿),蓋回藕蒂,用牙籤固定。牛腱洗淨,飛水。煲滾清水12杯,放入牛腱、釀蓮藕、鱆魚及陳皮,用大火煲15分鐘,轉慢火煲2小時,再用中火煲10分鐘,下鹽調味,盛起釀蓮藕及牛腱,切片上碟,配以蓮藕湯供食。

蓮藕釀入綠豆熬湯,除可增添美感外,湯水也不會太混濁。此外,也可加入蓮子及百合同熬。
