1. | Cut off legs of prawns and rinse, drain. |
2. | Peel off pineapple, removes meat and diced, minced red chili and lemon grass | 3. | Sprinkle prawns with some cornstarch and fry in 1 tbsp oil until 80% cooked. |
4. | Heat 1 tbsp oil, sauté garlic, shallot, red chili, lemon grass and add in curry powder, stir, pour in coconut milk and let it cook for 2 minutes, add in pineapple meat, prawns and seasonings, stir-fry and serve. |
