100g unsalted butter | 100g all purpose flour | 30g curry powder | 300ml fish stock | 600ml heavy cream | 50 pcs clams (cleaned) |

Some cajun spices | Some Pepper |

Cooking Method

1. | In a heavy sauce pan, heat the butter over moderate heat. When the foam subsides, remove the pan from the heat, then whisk in the flour until smooth. | 2. | Return to heat and whisk in the curry powder, add the stock and until the mixture thickens. | 3. | Add the cream, reduce the heat and simmer for 15 minutes stirring from time to time. Add the clams and cover until the clams open. Season with Cajun spices and pepper to serve |
