120 g fresh tuna | Some olive oil |

Seasoning
|

5 g ginger | 5 g garlic | 5 g Thai ginger | 6 g chilli | 10 g turmeric | 1/4 tsp shrimp paste | 20 ml tamarind juice | 3 pcs lemon grass |

Marinade

Cooking Method

1. | Blend all seasonings. | 2. | Heat some olive oil to cook seasonings for 1 minutes and add in tamarind juice and some water. Cool down. | 3. | Brush (2) on the tuna fish and wrap with food wrap. Then, fringe for 30 minutes. | 4. | Heat some vegetable oil to pan-fry tuna fish until crispy. Stay at room temperature for 3 minutes. Slice and ready to serve. |
