1. | Rinse the crab and chop. Take out the crab fat. Poach the crab fat for 3 minutes until done. Drain and remove. |
2. | Steam the crab in high heat for 15 minutes until cooked. Remove the meat. Rinse pea shoots and drain. | 3. | Heat some oil and stir-fry pea shoots, add in seasonings, sieve it and place on dish. |
4. | Cook all the sauce ingredients. Add in egg white and crab meat and crab fat. Pour on top of pea shoots to serve. |
