Ingredients
 
1 pc female crab640g pea shoots
1 pc egg white 
 

Seasoning
 
160 ml Stock 1 tsp Salt
1 tsp Sugar 1 tsp Ginger Juice
Some Shaoxing Wine 
 

Marinade
 
Sauce:240ml stock
1 tsp Salt 1 tsp Sugar
1 tsp Pepper 1 tsp Corn Starch
 

Cooking Method
 
1.Rinse the crab and chop. Take out the crab fat. Poach the crab fat for 3 minutes until done. Drain and remove.
2.Steam the crab in high heat for 15 minutes until cooked. Remove the meat. Rinse pea shoots and drain.
3.Heat some oil and stir-fry pea shoots, add in seasonings, sieve it and place on dish.
4.Cook all the sauce ingredients. Add in egg white and crab meat and crab fat. Pour on top of pea shoots to serve.
